Quinoa  is a small round seed of a spinach-like plant that has been cultivated since Incan times. Highly appreciated for its nutritional values: source of protein (12%) which fills you up for longer, and known as a low GI food, giving you longer lasting energy. Quinoa’s mild, slightly nutty flavour makes it an alternative to rice or couscous. Toast quinoa briefly prior to cooking to give it an even nuttier flavour. Uncooked seeds may be added to soups or stews, as you would barley or rice. Quinoa MUST be rinsed well in cold water before it is cooked to remove the saponins, a bitter-tasting natural protective coating. Enjoy this super grain for breakfast, lunch or dinner!
